Hands on the wheel would not have helped once he got going. If the impact/roll is enough to slam you to the ceiling you'd have to be The Hulk to hang on successfully. Seatbelt was about the only thing that would have kept him in his seat and not thrown about.
When mid-accident, one holds on to whatever they can, pretty reflexively. Since his arm was already over on the side, it's understandable that he used that side's hand to grab the seat as best he could... especially as he just woke up (the accident, IIRC, was caused by falling asleep at the wheel).
The nasty part of this vid most folks don't catch. The last few frames, his head goes through the window (which is now facing the ground, that's the side the car ended up on) and gets crushed like a grape, under the B-pillar. It was a fatal accident.
I've seen that bug as well, happens when you had a previous video on your friends page. Ctrl+F5 usually clears it. I'm running a recent trunk build of FFx, perhaps that's it.
Saw this on worlds wildest police chasings or something like that. Guy was a taxi cab driver who worked too many hours. He fell aseep at the wheel, his the median rail, bounced off and rolled into the ditch. Car ended up upside down, and totaled. He was more or less ok though. Except for his job. I think they mentoned they fired him after that one.

(Also, speaking of the iDrive caamera, there was a nice film of a bus crash on the manufacturer's site, but sadly it isn't on Youtube. The bus more or less flies over the median, then comes to a crash, and the only passenger gets up and asks the driver to let them out immediately. Funnier when you see it than when you describe it.)
I remember that. Odd that most of the "aftermath" text goes on to mention the journalistic aspects, instead of the justice that pushed him to this deed.
Well, that happening in front of the cameras is still not the same as people diffusing that kinda video on the Net for their entertainment, I say... >_<
