The article points out some very interesting things. However, what he failed to mention is that if an American is walking into a Japanese sushi restaurant, the sushi chef nor the waitstaff would expect the American to follow their customs to the letter, and it's not all that insulting to not follow their customs. If you were Japanese, though, and did the same thing, you might get kicked out. :)

He also failed to mention that sushi restaurants are not always run by Japanese. Depending on your region, it could be run by someone of Chinese descent, Korean, Thai, Vietnamese, Laotian, etc. So they don't honor or repeat Japanese traditions. So before spouting a whole bunch of poorly-phrased Japanese, know who your chef actually is. :)

Personally, when I'm at a restaurant and someone tries to spit out some tongue that is obviously not native or trained to them, and pretend to act in a certain way that is also not trained or native to them, they just come off as pompous and showy. :)

I've been to a Chinese restraunt, and Thai restraunt in my town, and they both serve sushi.

That's interesting, because I'd think the opposite. Someone trying to speak another language would be interpreted by me that they're taking some time and effort to try and learn about another culture, which would reflect well on them. (All IMHO, of course.)

Not bad... my old professor was a massive sushi snob...

One tip I remember to gauge the quality on the sly- see if you can score a Tamago-zushi. It takes a skilled craftsman to swirl the egg properly, and it's DELICIOUS.

There's also this awesome sushi documentary on you tube :). It's all in Japanese, but it's got subtitles, and looks like the sort of edutainment you'd expect to find in a classroom.
