The short version: The banana skin is a semipermeable membrane that allows the potassium and other electrolytes to diffuse out while the ethanol diffuses in.

Okay, but to make it work BETTER, you really need to use a simple syrup rather than granulated sugar. The only way granulated sugar will dissolve properly it needs heat. You can look up the proper method, but it's pretty, well, simple.

Then add the syrup to the vodka as you would the sugar. I will be easier for the banana to absorb. Sweet.

Nice idea, though I'd be a bit worried about preservative agents diffusing into the banana with the solvent around.
